This type of wine is quite exclusive and it is produced in small quantities.The wine-making process happens in concrete barrels, then in rovere wood barrels for 18 months. After that, the wine rests for some time in the bottles. The process to make this Nobile takes three years and much effort and dedication. The results are worth the work, since Cesiro is an extremely fine equilibrated wine.

Particularity
The grape is Sangiovese and the latter has been grown in an old vineyard. The grape selection is very important and only the best ones are chosen, therefore the production is quite low about 50-60 q per hectar. The fermentation happens thanks to natural yeasts in cement tanks without the temperature control. The wine is not filtrated in order to maintain its characteristics and there is also a low use of sulphites.
