We produce this wine only in the best years, with grapes cultivated in a small vineyard of 0,85 hectares called “Vigneto Campaccio”, that was planted in the year 1967, in which the particular soil is composed by clay with little stones, and the exposure to sun and to wind give a very important and unique character to grapes. In the second half of October when the maturation is perfect, we hand harvest the best grapes of Prugnolo Gentile (90%), Canaiolo Nero (5%) and Mammolo (5%), in the cellar immediately taked, and after a cold pre-maceration stage, takes place an alcoholic fermentation, in 50 hl tanks at a controlled temperature with frequent fullings and delestages and a final light pressing of the skins, to support the maximum extraction of their components. Ageing in wood is normally done in 500 liters French oak barrels of different origin ( Allier, Vosges) for about 40/44 months, this to permit the best maturation of the Wine but without print the wine with the oak, with the target to exalt the territorial peculiarity of our Vigneto Campaccio. The wine after is bottled, and before being put on the market the wine is aged and refined al least for 10 months in bottle. This wine represents the character of our land and of this special vineyard, according to our wine-producing conception that want respect the territory, and proposing the particular results of a land in wich there is the cultivation of the vine from thousand years.
