It is the wine of point of the company, produced in the youngest estate of vineyards. This is the origin of “Vitaroccia”, a wine of the most elevated regard, produced in limited quantities and only in the best years.

The grapes scrupulously selected to hand and cultivated in “Podere Fucile”, ripen twenty four months in little trunks of French durmast that give to the wine persistence, harmony and the ability of acquiring a wonderful balance, also after a long refinement period in bottle of 12 months.
Grapes:
98% Sangiovese, 2% Petit Verdot
Vinification and refinement:
The alcoholic fermentation happens to a temperature of about 29-33°C in steel reservoirs for 25-28 days. It follows then the drawing off wine and the malolactic fermentation, that happens to a temperature of 18-20°C. The maturation happens in little barrels of French durmast of 225 L and 500 L. After 24 months the wine is bottled; it remains there for further 12 months to refine before being commercialised.

Organoleptic characteristics:
Red colour intense ruby. To the nose he turns out to be wide, spiced with signs of red fruit ripens and jam. To the palate with great character and a long persistence; rich, cleaned and extremely elegantly.
Service temperature:
18°-20°C
Coupling:
Perfect in coupling with important plates as roasts, grill meats or to spit, game and seasoned cheeses. Excellent if combined by the traditional Fiorentina steak.
