On the palate it is pleasantly soft, full-bodied, with great minerality and persistence.

Manual harvest in small baskets and subsequent selection of the bunches
Soft pressing for whole launches of grapes
Cold fining at the end of fermentation
Alcoholic fermentation in small stainless-steel tanks
Ageing of the wine partly in steel and partly in tonneau
