Imagine a warm late summer afternoon, immersed in the beautiful Sienese countryside, among fields of wheat, ancient olive trees and tall cypress trees to crown the Sangiovese vineyards. The scent of the summer that goes away, the smell of the Crete Senesi becomes intense, the first bunches are to be harvested and in the vineyard you can breathe the scent of harvest. Valdipiatta in his Noble 2011 tells us about these sensations, through aromas of cooked fruit and soft hints of earth.

Fermentation and ageing
Fermentation with selected yeasts. Malolactic fermentation in stainless steel tanks. 6 month period in small French oak barrels, and additional 12 months in 50 hectoliter 
Slavonian oak casks. 
Minimum 6 month period of bottling ageing.
